A mild yet flavorful sheep milk cheese from the Pays Basque country (the French Pyrenees side). Etorki is semisoft, sliceable, and creamy on the palate. Excellent with fruit and bread, on sandwiches, with both red or white wines, but it especially loves burgundies. A cheese that pleases both the beginner and the more sophisticated palate.
